Cheesy Vegetable Omelette

This Cheesy Vegetable Omelette keeps things simple—fresh veg, fluffy eggs, melted cheese—and comes together beautifully on the Connect Pan & Griddle XXL.

What You’ll Need

 

 

  • 1 Green Bell Pepper (sliced)
  • ½ Red Onion (sliced)
  • 100g Chestnut Mushrooms (sliced)
  • 50g Cheddar Cheese (grated)
  • 4–6 Large Eggs
  • 2 tbsp Salted Butter
  • Salt & Pepper (to season)

 

 

How to Make It

 

 

  1. Start with the veg: In the griddle side of your Connect Pan, melt 1 tbsp of butter over a low-medium heat. Add the onion, pepper, and mushrooms. Let them soften gently—don’t rush this step, it’s where the flavour starts.

  2. Get the eggs ready: While the veg is cooking, whisk your eggs in a bowl and season with a pinch of salt and pepper.

  3. Swap pans: Once the veg is tender and slightly golden, take the griddle off the heat. Switch over to the flat pan, melt the remaining butter, and pour in the egg mixture.

  4. Shape the omelette: As the edges start to set, use a spatula to gently push them in, letting the runny egg fill the gaps and cook through evenly.

  5. Fill it up: When the omelette is nearly set but still a little soft on top, add your sautéed veg back in and sprinkle generously with grated cheese.

  6. Fold & finish: Let the cheese start to melt, then carefully fold the omelette over twice to form a neat roll. Cook for another minute to firm everything up.

  7. Serve & enjoy: Slice into portions and serve hot, straight from the pan.
