Cheese, Onion & Tomato Toastie

Golden, gooey, and good to go

Some meals just feel like home—this one takes that feeling and wraps it in a crispy, golden crust. With melted cheese, sweet tomato, and a hit of sharp red onion, this no-fuss toastie is everything you want from a hot snack on the move. It’s quick, it’s easy, and it only takes 10 minutes.

Whether you're grabbing lunch on the trail or need a fast fix at camp, this classic combo never fails.

What You’ll Need

  • ½ Red Onion (sliced)
  • ½ Salad Tomato (sliced)
  • 4–6 slices of Cheddar Cheese
  • 2 slices of your preferred Bread
  • Handful of fresh Parsley (for garnish)

How to Make It

  1. Prep and preheat: Get your sandwich toaster on a low heat. While it warms up, slice your tomato and onion nice and thin.

  2. Start layering: Place one slice of bread into the toaster. Add a generous base layer of cheese (2–3 slices).

  3. Stack it up: Layer the tomato and onion evenly across the cheese, then top with the rest of the cheese slices. You want it to be gooey all the way through.

  4. Seal it in: Press the second slice of bread on top, close the lid firmly, and let it toast for a minute or two.

  5. Flip and toast: After a couple of minutes, flip the toaster and check your progress. Toast both sides until the bread is golden and the cheese is bubbling.

  6. Serve it hot: After 8–10 minutes total, remove from the heat, slice in half, and garnish with chopped fresh parsley. Serve as is or dunk into your favourite dipping sauce.

Pro Tip:

Add a smear of mustard or a dash of hot sauce inside for an extra kick—it plays brilliantly against the melted cheese.

There’s no need to overthink it. This toastie is proof that with just a few good ingredients and a bit of heat, you can whip up something truly satisfying, wherever you are.
